G'day.

Here a cookbook that a couple of friends and I put together from recipes that we used/came up with after being asked so often what we eat. It's in pdf format and it's free. :thumbup:

Some of the recipes have altered since this was put together (the apple pie pastry for one), so please don't feel constrained to do it exactly as the recipe states. After all, individual tastes differ, so feel free to alter it to your preference. :thumbup:

Eating simply to simply live,
To my body I do give,

This is a book of recipes that started out for personal use and as a way of
sharing recipes with friends. Each of us that have added recipes to this
compilation have come from variant backgrounds in regards to cooking and the
way in which we ate. Ultimately, we have come to a decision for the physical
benefit that being healthy gives, that of ability. Ability to continue to enjoy life.

When we feed the body naturally - nature...ally - , nature becomes our ally. It
is now becoming a 'trend' to eat 'power' or 'super' foods for the amazing
benefits that each plant product gives the body. Well, here's something that
they won't say to you because they are selling their 'brand product' - ALL OF
NATURE IS YOUR ALLY. Each and every food is utilised by the body for a
purpose. Nature is our ally because nature provides us with everything that the
body requires to continue the ABILITY to enjoy life.

Whole Food Signatures: "Every whole food has a pattern that resembles a body
organ or physiological function and that this pattern acts as a signal or sign as
to the benefit the food provides the eater."

information further yourself.

There are canned products that we utilise, like tomatoes and coconut cream. If
you are unable to gain the fresh ingredients, then using organic canned
products might be an alternative because they can be easily found in most
supermarkets. Locally grown food is recommended, which means growing
your own could also be an option for you. Having no 'numbers', preservatives,
artificial colourings, artificial flavourings, or any other additive, such as
vitamins, pesticides, etc, means you are eating naturally and the body can
utilise the energy that was being taken up with dealing with all of the 'man
made extras' and the problems that they create within the physicality.

Love the experience of creating a meal. There's truth in the sayings, "It tastes
better when it's cooked with love", and, "There's nothing like a home cooked
meal". Ask a chef if they love cooking.

Eating Simply To Simply Live gives you the opportunity to see what we have
created with the natural products that we have available where we live. Some
of you may have access to a lot of various natural foods, others may have little
access, either way, these recipes are merely ideas of one way that food can be
combined for a meal. These recipes aren't the only way, they are merely one
way, and we encourage you to experiment with your own ideas to benefit by
Eating Simply To Simply Live. :D Enjoy :D


Sample recipes (for those with a sweet tooth ;) ):

FUDGELICIOUS


A healthy carob and peanut butter fudge that is utterly delicious.
The amounts I have listed are aproximates and I had a lot of dry mix leftover after adding them to the peanut butter and honey. I used what was left to make the mousse - see next recipe - that can be spread on the fudge to make an amazing combo. (I found this recipe on the net but I don't have the link anymore.)

INGREDIENTS
Honey - 12 dessert spoons.
Peanut butter - 6 - 10 dessert spoons, depending on how sweet you llke it.
Sesame seeds - One third of a cup.
Sunflower seeds - One third of a cup.
Carob powder - 1/2 to Two thirds of a cup, depending on how rich you like it. You can use cocoa instead (half the amount).
Desiccated coconut - One quarter of a cup
Sultanas - One quarter of a cup

METHOD
Combine honey and peanut butter in a saucepan, heat gently, stir occasionally.

MIx the other ingredients together in a bowl (except for the sultanas).

When the peanut butter and honey is combined, remove from heat and immediately add other ingredients, except the sultanas, and mix well.

Grease a pan/tin of desired shape and depth and press the mixture into it, smoothing the top. Press in the sultanas and fridge until firm.

Variation:
Replace honey with maple syrup or other sweetener.
Replace carob with cocoa. Only need half as much as cocoa is a lot sweeter.



MOUSSE


This recipe uses coconut cream that has set in the fridge and is then whipped in a blender to create the mousse texture. Or you could use a can straight out of the cupboard and place the finished mousse in the fridgte to set. Coconut cream is an awesome replacement for dairy products in recipes. It sets really well and goes with so many different fruit and nut flavours. I AM ALL I AM and Harmony 5 have come up with some great dessert recipes that use it. It is handy to keep a tin of it in the fridge.

INGREDIENTS
Tahini - 1 – 2 dessert spoons
Carob powder - Quarter to one third of a cup
Coconut cream - Small tin, 270 ml – fridged.
Banana - 1
Sesame seeds - Little under one sixth of a cup.
Sunflower seeds - Little under one sixth of a cup.
Desiccated coconut - One eighth of a cup
Honey - 1 tea spoon.

METHOD
Combine everything in blender.... easy peasy.

This is awesome with fudgelicious and avocado. Or on toast with banana and peanut butter or with crushed nuts. It is also good on rice cakes with avo or peanut butter. You could easily make a nutella flavoured one with hazelnuts. I reckon avo's and nanas go great with heaps of sweets and they are both in season here and we have found a local organic grower who sells them cheaply at the market each week.

I'm thinking of getting myself a good juicer to get some more fruit and veg into my body.....I don't eat nearly enough of it.

G'day Wake_Up_Bomb.

Not eating dairy isn't that difficult as it might seem. Rice milk and oat milk are easy substitutes for cows milk. You'll notice a few recipes using coconut cream which is a great replacement for standard cream. Coconut cream is also great to add to pasta sauces as it balances out the acidity of the tomato sauce.

Depending on your local suppliers, it can be difficult getting decent fruit and veg. I'm fortunate here, having recently moved up to the Gold Coast in Queensland I found an organic market that is on every Sunday, so that's where I get the majority of my supplies from. It's also great because I know the growers, which is always a bonus.

I bought a self hypnosis audio called Ditch the Dairy recently. It has really worked. There is a trance track and also NLP exercises. A couple of these are particularly effective. One involves visualising finding a pube while eating your favourite dairy product. Another involves imagining you are eating a puss sandwich. I have found cheese repulsive since I did these and it was previously my favourite food in the whole world.

It's not so much replacing it in my diet, it's more that my body continues to crave it. As you obviously know far more than nutrition than me, you probably know that cheese has a protein, casein, which the body breaks down into morphine.

Ahhh, okay. Well, you've done the 'hard yards' then, especially going cold turkey with it.

Chef Isa is correct, your taste buds will change and the cravings will reduce over time until they disappear. Some people prefer to reduce their intake over time, personally, like you, I went cold turkey and haven't looked back. I'm at the point (and have been for around a decade now) where I really do not like the smell of cheese or milk. I can handle the smell of meat and even the smell of some meat being cooked smells a-okay to me (not enough to get me to eat it though), to the point where I like the smell. Yet the dairy is very off putting.

The dopamine kick from specific 'foods' can be an issue in stopping eating them. Exercise can help increase dopamine production, though it will plateau out. You could also keep some of these foods around to snack on for when you get a craving, as they will increase dopamine levels; almonds, avocados, bananas, pumpkin seeds, and sesame seeds. Lima beans are also known to increase dopamine and they can be made into a dip and kept in the fridge to snack on, or incorporated into a meal.

Cutting down on sugars is a major issue for many. The highly processed foods that many tend to eat fulfill the cravings for dopamine because they are high in sugar. It's actually a very addictive substance, which is one reason that it is in so many foods. Stevia is a great replacement for sugar, and the less you have, eventually the less you'll crave any of the dopamine producing processed 'foods'. Raw, unprocessed sugar is best if you are going to have it.

Anyway, enjoy the meals. Many are 'standardised' meals simply without the dairy, meat, etc. :thumbup:

I'm sure I had the worst diet in the world until quite recently, luckily I've always got away with being slim whatever I ate, and have always been quite physically fit, so I didn't really give it enough thought. Thanks for the advice.

I definitely know where you are coming from mate. I used to eat anything and everything and not put on weight and have always been physically fit. When I was in the UK for instance ('93-'97), I ate so much crap it wasn't funny. It was nothing for me to go through a few cans of coke, half a dozen chocolate bars and two or three meals of 'fast food' (which includes the dreaded McDonalds). I basically didn't cook anything. It was a VERY poor diet to say the least.

Shit, I remember telling my mum that I could eat anything so long as I burned it off when I was a teenager. The thing was, because I was so active physically, I basically could. Over the long run though, it obviously caused some problems as I had a congenital condition that is degenerative. If I had of known then what I know now I probably wouldn't have had the issues with my spine that I do. Still, no regrets, at least I know now. ;)

There were a heap of recipes that didn't make it into the cookbook because we had to keep it down in size as we got it printed. I left them behind in Port Macquarie when I moved recently, though I'll see if I can recall them and will add them onto this thread. I'll probably get back down to Port some time this year, so I'll see about getting a copy of the other recipes if I don't recall them all.

If, like I hadn't, you don't cook much, I suggest getting a handle on the herbs and spices, as well as some simple techniques on how to cut/prepare foods (it'll cut down on preparation time - no pun intended ;) ). It's not very difficult and it makes it easier to 'play' with recipes, and even make up new ones. Some of the ones in the cookbook are ones that I came up with without copying anything from any recipes ... and I definitely was not a chef in any way, shape or form. :D Still not really. Though I will say that I absolutely love cooking/preparing a meal now ... as well as eating it. :D

I haven't done this one for a while now. From memory, I'd say around a standard pyrex baking dish worth ... as I said, not enough.
