I don't know if it still applies, but a few years ago, if you wrote 'Full & final settlement', or even just 'FFS' on the back of a cheque and the payee cashed it, it was deemed as legally binding, & they'd be breaking the law if they pursued you later for further payments towards that transaction. Should try to check if it's still so, and use it for self-protection.
