A very good question posted. I STILL have not extricated the three or four boxes of canned goods from my closet that my folks packed in '99 for Y2K - and I'm not making this up.
Since there are new tires on the hand truck I no longer have an excuse. But permit me credit as I'm slowly getting rid of all the spare, dead vacuum cleaners, spare coffee maker carafes, cardboard boxes, excess plastic bowl lids, and other sundry things scattered about. *sigh*

Just FYI, mercury is present in most seafood.
Its coming from the fish itself rather than the tin.
If you're getting fluoride from anywhere then it'd be fluoridated tap water at the canning factory if water is used.
Worry about Bisphenol A in canned food if anything.
Depends on the product tbh.
I knew about the Mercury, I just read that Tuna contains the most, and Pilchards contain much less because the fish don't live long enough to absorb it.

I gave up all tins in the last year or so. Most tins now are lined with BPA plastics, if you find tins that are without these with good quality foods inside, I wouldn't see too much of a problem.
The problem with tinned goods, for example coconut milk, you end up with a completely dead product. This is because the contents are also pasteurised (heated), so that all the living enzymes and vitamins are killed. This is also the case with most fruit juices.
I'm an extremist, so I'm mostly on raw food and I'm vegan. However, during my research on Gerson therapy, it was amazing to see cooked food and uncooked food under special cameras. Essentially, uncooked food is full of energies that are beneficial to us.
OK, I've had my set backs with tick bites (be very careful about those bastards) but I forage now and started this year. I love nettles and spend too long picking them, cleaning them in ozone and juicing them. So much so, I'm going to cut down! Also stir fried they are fantastic, however I do raw as much as poss. Cooking them is far faster and easier. However other foods that I gather such as chickweed are far easier and taste out of this world.
In any case, we're quality people and deserve the best. I'm just saying it's on our doorsteps in abundance now. It means not buying coorporate tinned rubbish and being kind to yourself.
Also, on the subject of beans, I've been growing my own sprouts from dried lentils. Therefore, I gain a great source of living food. They taste great as well, I mean really good. WTF we spend so long cooking these things and killing everything in side, is crazy!! I've tried others as well but the chickpeas and kidney beens when off and didn't spout very well. (I'd ozonise the water more to keep a health environment, if I did it again).
In my experience, tinned food is mostly ok. At least in Finland, there's small food producers here too who make tinned stuff, which of course is bit more expensive, but good.
I don't eat tune any more, I used to eat it all the time when I was kid... But with cow/pork stuff, that's something I like. Only problem with that is the amount of preservatives in it, otherwise it's only meat/fat + some spices and nothing else.
I don't know how these are made in other coutries.. But in Finland most are quite high quality and without too many unnecessary poisons. At least we don't have fluoride in tapwater.
