What would happen is that you'd have to arrange someone to collect your bins. And cancel your Council Tax direct debit.

Apart from that, no-one would notice the government had gone.

The Houses of Parliament could be given to homeless people.

They'd also make for a cracking Tesco. Having said that, most of the folks in there are probably already major shareholders so we'd really only need to stick a Tesco sign on Ben. Hey presto - corporate headquarters!
